- 250g rice noodles
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 red bell pepper, thinly sliced
- 1 carrot, julienned
- 2 green onions, chopped
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp sesame oil
- 1 tsp chili flakes (optional)
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions:
- Prepare Noodles: Cook rice noodles according to package instructions. Drain and set aside.
- Cook Scorpiomantis Meat: In a pan, heat sesame oil over medium heat. Add garlic and ginger, sauté until fragrant. Add Scorpiomantis meat, cooking until lightly browned.
- Add Vegetables: Add bell pepper and carrot, sauté for 3-4 minutes until tender-crisp.
- Combine: Add noodles to the pan, toss with soy sauce and fish sauce. Mix well until all ingredients are evenly coated.
- Serve: Garnish with green onions and fresh cilantro. Serve with lime wedges on the side.
