  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon fresh sage, chopped
  • Salt and pepper to taste
  • 1/4 cup red wine
  • 1/4 cup beef broth

Instructions:

  1. Prepare the Marinade:
  • In a bowl, mix olive oil, minced garlic, rosemary, thyme, sage, salt, and pepper to create a marinade.
  1. Marinate the Roast:
  • Rub the marinade generously over the Drumheller Cow roast.
  • Place the roast in a resealable plastic bag or a covered dish and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to penetrate the meat.
  1. Preheat the Oven:
  • Preheat your oven to 375°F (190°C).
  1. Sear the Roast:
  • In a large skillet over medium-high heat, sear the marinated roast on all sides until browned. This helps to lock in the juices.
  1. Roast the Meat:
  • Transfer the seared roast to a roasting pan.
  • Pour the red wine and beef broth into the pan to keep the meat moist during roasting.
  • Cover the roasting pan with aluminum foil.
  1. Cook the Roast:
  • Roast in the preheated oven for about 2 to 2.5 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare, or longer if you prefer more well-done meat.
  1. Rest the Meat:
  • Remove the roast from the oven and let it rest for 15-20 minutes before carving. This allows the juices to redistribute throughout the meat, ensuring a juicy and tender roast.
  1. Serve:
  • Slice the roast against the grain and serve with your favorite sides.
